What it is

Layered Italian dessert of coffee-soaked ladyfingers and mascarpone cream.

Born in the Veneto in the second half of the 20th century, tiramisu layers savoiardi dipped in espresso with a whipped mascarpone-egg cream, dusted with cocoa. Great ones balance bitterness, sweetness and structure: the biscuit should yield but not dissolve.
